What does "Dry-Grown" actually mean?

In modern viticulture, most vineyards rely on drip irrigation to keep vines hydrated and yield high quantities of fruit. It keeps the canopy lush and the grapes plump.

Dry-grown (or unirrigated) winemaking is the exact opposite.

Our established vines at theHome Block in Steels Creek(planted in the late 1970s) and ourMelba Block in Dixons Creek(planted in the early 1980s) live without artificial water lines. They depend entirely on natural rainfall, deep root systems, and healthy soil biology.

When a vine isn’t given easy surface water, it has to work. The roots push deep down through the grey loam soils, searching meters underground for natural water tables. Along the way, they drink in rich minerals and nutrients that surface-watered vines simply can’t reach.

3 reasons Dry-Grown vines produce superior cool-climate wine

Concentrated flavour over quantity

Because dry-farmed vines control their own crop size, they produce smaller, tightly packed grape bunches. Smaller berries mean a higher ratio of skin-to-juice. Since all the tannin, color, and aroma live in the skin, the resulting wine carries natural intensity and vibrant fruit purity without ever feeling heavy.

Beautiful natural acidity

The Yarra Valley’s cool climate gives us long, gentle ripening seasons. Dry farming amplifies this by keeping the vine’s energy balanced. Minimal Intervention: From vineyard to plate

Dry farming is just one piece of our sustainable viticulture puzzle. Out in the vineyard, founders Matthew Davis and Brad Atkins lead a minimal-intervention approach—using under-vine weed management, green manure cover crops to enrich the soil naturally, and zero harsh herbicides.

This hands-on philosophy carries straight into theSteels Gate Restaurant. Matthew builds our seasonal dining menu around fresh, local ingredients that match the natural structure and clean acidity of our dry-farmed wines.

Whether it's a glass of Estate Chardonnay paired with pan-seared local fish, or a glass of Pinot Noir alongside garden-to-table seasonal dishes, the synergy between vine and plate is seamless.
